Shiitake Mushrooms a la Arménlenne
This recipe is an adaptation of a classic French recipe
To serve 4 you will need:
- 275g Really Welsh Shiitake Mushrooms
- 2 rashers of home cured bacon
- 1 garlic clove, thinly sliced
- 2 tbsp olive oil
- 1 glass of red or white wine
Method:
- Slice the mushrooms and remove the stalks, then saute them in the olive oil. Add a few very fine slivers of garlic and the bacon cut in squares.
- Let them cook for a few minutes before pouring on the glass of wine. Turn the heat up and cook fast for one minute to reduce the wine.
- Now turn the heat down and cook for a further five minutes. Serve with fresh bread or as a garnish for an egg dish.
