Really Welsh Mushroom Recipes

Shiitake Mushrooms a la Arménlenne

This recipe is an adaptation of a classic French recipe

To serve 4 you will need:

  • 275g Really Welsh Shiitake Mushrooms
  • 2 rashers of home cured bacon
  • 1 garlic clove, thinly sliced
  • 2 tbsp olive oil
  • 1 glass of red or white wine

Method:

  • Slice the mushrooms and remove the stalks, then saute them in the olive oil. Add a few very fine slivers of garlic and the bacon cut in squares.
  • Let them cook for a few minutes before pouring on the glass of wine. Turn the heat up and cook fast for one minute to reduce the wine.
  • Now turn the heat down and cook for a further five minutes. Serve with fresh bread or as a garnish for an egg dish.
