Healing Shiitake Mushroom Starter
Both ginger and coriander calm the digestive problems, while spring onions are used in China to dispel "wind and cold evils".
To serve 4 you will need:
- 500g fresh medium sized whole Really Welsh Shiitake Mushrooms, cleaned and stalks trimmed
- 2 tbsp sesame seed oil
- 100g spring onions, sliced
- 1 small piece of fresh root ginger, peeled and chopped
- 1 tbsp fresh chopped coriander
- Salt and pepper
Method:
- Heat the oil in a heavy-bottomed frying pan, add the ginger and spring onions and fry for 1 minute.
- Add the mushrooms and cook until brown and golden on both sides, and the juices have run and evaporated. The mushrooms should be turning slightly crispy on the edges. Season to taste with salt and fresh black pepper.
- Remove and place on a warmed serving plate and sprinkle with the chopped coriander. Serve with lightly fried crispy noodles.
