Really Welsh Cauliflower Recipe

Cauliflower Cheese, Bacon and Pasta Bake

To serve 4 you will need:

  • 300g pasta shapes
  • 1 whole Really Welsh Cauliflower, broken into florets
  • 250g pack smoked back bacon
  • 150g Caerphilly cheese, grated

Method:

  • Preheat the oven to 200°c, gas mark 6.
  • Cook the pasta according to the pack instructions and drain.
  • At the same time, simmer the cauliflower for 6-8 minutes until tender.
  • Drain.
  • Meanwhile, grill the bacon for 4-5 minutes under a preheated grill, turning once half way.
  • Chop the bacon and stir into the pasta with the cauliflower and transfer to a 2 litre ovenproof dish.
  • Sprinkle over the cheese and bake for 20 minutes until golden.
  • Serve immediately.
