Red Hot Beef with Cashews
You will need:
- 500g Boneless lean beef sirloin (Welsh) sliced thinly
- 1 tsp olive oil
Marinade
- 1tbsp sesame seeds
- 1 garlic clove chopped
- 1 tbsp fresh ginger root, chopped finely
- 2 Really Welsh apache chillies chopped
- 2 tbsp soy sauce
- 1 tsp red curry paste
To Finish
- 1 tsp sesame oil
- 4 tbsp cashew nuts
- 1 spring onion sliced thinly
Method:
- Cut the beef into 1cm wide strips. Place them in a large, non metal bowl.
- For the marinade, toast the sesame seeds in a heavy based pan over a medium heat for 2-3 minutes until golden brown.
- Place the seeds in a mortar with the garlic, ginger and chilli and grind with a pestle to a smooth paste. Add the soy sauce and curry paste and mix well.
- Spoon the paste over the beef strips and toss well to cover the meat evenly. Cover and leave to marinate in the fried for 2-3 hours, or overnight.
- Heat a frying pan until it is very hot and brush with olive oil. Place the beef strips in and cook quickly turning frequently until lightly browned. Remove from the heat and spoon on to a hot serving dish.
- Heat the sesame oil in a small pan and quickly fry the cashew nuts until golden brown (take care that they do not burn). Add the spring onion and stir-fry for 30 seconds. Sprinkle the mixture on top of the beef strips and serve the dish immediately.
