Really Welsh Chilli Tomato Relish

You will need:

  • 250g ripe tomatoes, skinned and chopped
  • 250g red peppers, peeled and chopped
  • 6 red chillies deseeded and chopped
  • 7.5cm piece of fresh ginger peeled and grated
  • 2 tbsp salt
  • 200g sugar
  • 6 tbsp sherry vinegar

Method:

  1. Put all the ingredients into a food processor and pulse until coarsely chopped
  2. Transfer to a saucepan, bring to the boil, skim off the foam, then reduce the heat and simmer for 30 minutes
  3. Pour into hot sterilised jars, seal and let cool
  4. Use immediately or store in the refrigerator: it will keep for 2 weeks
