Really Welsh Chilli Tomato Relish
You will need:
- 250g ripe tomatoes, skinned and chopped
- 250g red peppers, peeled and chopped
- 6 red chillies deseeded and chopped
- 7.5cm piece of fresh ginger peeled and grated
- 2 tbsp salt
- 200g sugar
- 6 tbsp sherry vinegar
Method:
- Put all the ingredients into a food processor and pulse until coarsely chopped
- Transfer to a saucepan, bring to the boil, skim off the foam, then reduce the heat and simmer for 30 minutes
- Pour into hot sterilised jars, seal and let cool
- Use immediately or store in the refrigerator: it will keep for 2 weeks
