Bubble and Squeak

You will need:

  • 1 tblsp. butter
  • half cup chopped onion
  • 1 cup chopped leeks - white part only
  • salt and freshly ground pepper
  • leftover mashed potato
  • 1 tblsp. olive oil

Method:

  1. Sauté the onion and leeks in the butter until softened.
  2. Stir into mashed potato, taste and adjust any seasoning.
  3. Shape the mixture into a patty - whatever size you'd like.
  4. Heat the olive oil and fry the patty, turning once, until golden-brown all over.
