Bubble and Squeak
You will need:
- 1 tblsp. butter
- half cup chopped onion
- 1 cup chopped leeks - white part only
- salt and freshly ground pepper
- leftover mashed potato
- 1 tblsp. olive oil
Method:
- Sauté the onion and leeks in the butter until softened.
- Stir into mashed potato, taste and adjust any seasoning.
- Shape the mixture into a patty - whatever size you'd like.
- Heat the olive oil and fry the patty, turning once, until golden-brown all over.
